Modelo de Perfil de Nutrientes de la Organización Panamericana de la Salud 2016

El Modelo de Perfil de Nutrientes es proporciona una herramienta para clasificar los alimentos y bebidas que contienen una cantidad excesiva de azúcares libres, sal, total de grasas, grasas saturadas y ácidos grasos trans.

la Organización Panamericana de la Salud (OPS) encargó este estudio a expertos para que pudiera usarse como herramienta para la formulación y aplicación de diversas estrategias reglamentarias relacionadas con la prevención y el control de la obesidad y el sobrepeso, entre ellas las siguientes:

• Restricción de la comercialización de alimentos y bebidas malsanos a los niños;

• Reglamentación de los alimentos en el entorno escolar (programas de alimentación, alimentos y bebidas que se venden en las escuelas);

• Uso de etiquetas de advertencia en el frente del envase;

• Definición de políticas impositivas para limitar el consumo de alimentos malsanos;

Este documento, es un material de apoyo que describe los elementos básicos para la adecuada implementación y funcionamiento del kiosco escolar, entregando información sobre las condiciones sanitarias y funcionamiento óptimo del kiosco, incluyendo las características de su infraestructura y orientaciones sobre los alimentos que se pueden vender y promocionar al interior de los establecimientos educacionales, según lo exigido por el Reglamento Sanitario de los Alimentos.

Además, se incorpora una pauta de evaluación de infraestructura, oferta y publicidad de los alimentos del kiosco escolar con el objetivo asegurar la mantención y adecuado funcionamiento del kiosco, según el Reglamento Sanitario de los Alimentos

Infecciones Alimentarias: ¿Qué microorganismos son los responsables y cuales son sus síntomas?

¡¡Microorganismos que causan enfermedades transmitidas por los alimentos!!

La siguiente tabla incluye microorganismos causantes de infecciones alimentarias que provocan frecuentemente enfermedades en Estados Unidos y el Mundo, incluyendo Chile.

Como lo indica la tabla, los peligros son muchos y diversos, con síntomas que van desde malestares relativamente leves hasta enfermedades muy graves, que ponen en peligro la vida.

Si bien los niños pequeños, ancianos y personas inmuno-deprimidas corren mayor riesgo de padecer consecuencias graves producto de la mayoría de las enfermedades transmitidas por los alimentos, algunos de los microorganismos que se indican a continuación constituyen una verdadera amenaza para toda la población.
